Shepard’s Pie

Shepard’s Pie

One of my favorite winter dishes! Super grounding when it’s cold out. I love to make it with ground turkey personally, but they taste amazing both ways.

Enjoy :)

For the topping:

1½ pounds potatoes peeled weight

¼ cup+2 tsp milk

1 tablespoon butter

• ⅓ cup cheddar cheese coarsely grated

For the filling:

1 pounds ground turkey or ground beef

1 onion finely chopped

2 garlic cloves finely chopped

2 tablespoons olive oil

2 medium carrots peeled, diced

2 tablespoons tomato puree

1½ tablespoons Worcestershire sauce

1 teaspoon dried thyme or oregano/Italian

1¼ cups chicken stock hot

¾ cup frozen peas

⅔ cup corn from a can

1 tablespoon flour

Sea salt and pepper to taste

Boil the potatoes in salted water until soft while you cook. Once potatoes are cooked, mix in your choice of milk, butter, and seasoning.

Add oil onions, garlic, and carrots to a pan, cook for about 4-5 minutes. Add in ground beef or Turkey and add all the seasonings. Then once cooked add the tomato purée and Worcester sauce.

Once mixed, then add peas and corn, cook on simmer for 10 minutes. Then add flour, mix until thick. Add this to a casserole dish and top with mashed potatoes and cheese.

Cook at 400 degrees F or until cheese is melted. Top with scallions and Enjoy!
